My favourite food and recipes from the Channel Islands
Welcome to An Island Chef blog. This is all about sharing with you, my love of great food and some of the fantastic local produce available from the Channel Islands. I am lucky enough to live and work in Jersey so I can create recipes like my fabulous grilled Jersey Oysters with Liberation Blonde Ale and a make a stunning version of Ratatouille using the island’s best summer produce, aubergines, courgettes
There are amazing artisan food and drink producers as well as the growers, farmers and fishermen across Jersey, Guernsey, Alderney, Sark and Herm. They make fantastic cakes, pickles, curry sauces, sweets, milk and cheese and small batch gin. They grow and catch hand-dived scallops, oysters, sumptuous seafood, the world famous Jersey Royals, rare breed pigs and Jersey and Guernsey cattle.
I’ve worked as a professional chef in just about every type of restaurant you can imagine, from beach side burger joints to famous pizza and jazz haunts, in more than a few really good food pubs, and a former UK hotel of the year. So whether you are looking for some terrific foodie top tips – like how to peel root ginger with a spoon or maybe you just fancy something a bit different like Chorizo jam! I am sure there will be something for you.
It doesn’t matter if you have never picked up a knife or a pan, follow the techniques and recipes and you will be able to make some really fantastic food. Just as important I hope you and your family have fun. I am posting some of my favourite recipes from over twenty-five years of cooking experience in professional kitchens and using some of the fantastic food here in the Channel Islands .
