Fakes Soupa – Greek Lentil Soup. This week after a great meeting on Regenerative Farming I was given a packet of their Olive Green lentils. This made me think of a wonderful hearty recipe, that is vegan friendly and a great addition for my Meal Mates recipes.

Moules à la Normande with La Robeline Cider

Moules à la Normande are a variation of the classic Moules marinière using the cider produced in the region. Some recipes use mushrooms and some bacon which is how I like mine. We have a long tradition of cider making in the Channel Islands. For my recipe I am using La Robeline Cider. Since 2005 Richard and Sarah Matlock have been producing a ‘champagne’ style cider. Using a vintage French cider press shipped over from Normandy.

Smoked Mackerel Niçoise Salad

Smoked Mackerel Niçoise Salad. If you don’t already know a Niçoise salad is named after the French city of Nice. It is packed with Mediterranean or Provencal flavours. Nicoise salad has been described as “one of the best combinations of salad ingredients ever invented”.
