I think the last time I watched the Eurovision was as a student and coincidentally that was also when I visited Scandinavia. I can remember the beautiful scenery. The scarily expensive beer. Mountains of delicious seafood. Smorgasbords. Brunost, a creamy caramel flavoured whey cheese. And of course, the meatballs.

Weekend Top Tip – Let your roast relax!

I’m pretty sure Frankie wasn’t talking about sirloins and saddles of lamb but the important word here is RELAX. Every chef I know worth their salt* and every TV chef you watch will all tell you to let cooked meat relax
