Gambas al Ajillo – Spanish Garlic Prawn Tapas. Gambas al Ajilo is an iconic tapas recipe originally from Madrid. They are traditionally made and served in small earthenware dishes called cazuelita de barro. The list of ingredients is small. Prawns and the best quality Spanish olive oil you can afford. Some garlic, parsley, a splash of white wine and a couple of spices. While simple to make the flavours combine in a way that will have you wanting to lick the dish.

Fakes Soupa – Greek Lentil Soup. This week after a great meeting on Regenerative Farming I was given a packet of their Olive Green lentils. This made me think of a wonderful hearty recipe, that is vegan friendly and a great addition for my Meal Mates recipes.

An Island Chef Salad Parisienne

Salade Parisienne is a French bistro classic, the kind of dish you will find in little family-owned zinc bars and cafés. It relies on fresh ingredients simple prepared and served without a lot of fuss. Salade Parisienne is technically known as a salade composée this means it is arranged in bowl rather than all the ingredients tossed together. It usually consists of lettuce, boiled egg, potatoes, diced ham, and cheese dressed in a light mustard vinaigrette.
