My Chunky Minestrone Soup Recipe

At its best, a hearty, Italian classic, Minestrone is more of a stew of root vegetables and beans, sometimes with pasta and with the addition of whatever other seasonal vegetables are available. It is the perfect lunchtime or supper course nourishing, filling and very tasty.

Cantonese Crab and Sweetcorn Soup

Patatas Riojanas – A rather Special Spanish Chorizo and Potato Soup

I had some potatoes, onions and Chorizo in my fridge, so in my mind I was thinking something simple with perhaps a Spanish taste, the potatoes soaking up the flavour of the Chorizo. I looked up a recipe and came across Patatas Riojanas, a very simple rustic soup or stew from La Rioja.

Gazpacho

Gazpacho is very popular across the Iberian peninsula this simple version of classic chilled tomato soup is ideal as an appetizer or as a light lunch.
